Scallion Soup

Instructions
- Place the stick of butter in a large pot.
- Add chopped scallions, salt, and pepper.
- Cook slowly without browning for about 10 minutes, stirring all the while.
- Remove from heat and stir in the flour.
- Smooth the mixture.
- Add the chicken stock and stir over heat until the mixture oils.
- Simmer uncovered for 10 minutes.
- Remove from heat and add half a pound of sliced mushrooms.
- Place all in an electric blender and blend until smooth.
- Cool the mixture first for easier handling.
- Reheat the soup and add 1 1/4 cups of cream without boiling.
- Serve garnished with raw, sliced mushrooms if desired.
