Ingredients

  • 2 Tbsp. peanut oil
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1/3 cup chopped green bell pepper
  • 2 large cloves garlic, minced
  • 2 Tbsp. flour
  • 1 lb. ground chicken
  • 1/2 lb. chicken giblets, chopped
  • 1 tsp. gumbo file
  • 2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. cayenne red pepper
  • 1 cup chicken broth
  • 3 cups hot cooked rice with parsley

Instructions

  1. Heat oil in a Dutch oven over medium heat.
  2. Add chopped onion, celery, green bell pepper, minced garlic, and flour.
  3. Cook until the flour turns a deep red-brown, stirring constantly to prevent burning.
  4. Stir in ground chicken, chopped chicken giblets, salt, black pepper, and cayenne red pepper. Cook until the meat is browned.
  5. Add chicken broth, cover, and simmer for 25 minutes.
  6. Stir in cooked rice and chopped onion tops.
  7. Cook for another 5 minutes, then serve hot.
