Ingredients
- 2 Tbsp. peanut oil ⓘ
- 1 cup chopped onion ⓘ
- 1 cup chopped celery ⓘ
- 1/3 cup chopped green bell pepper
- 2 large cloves garlic, minced ⓘ
- 2 Tbsp. flour ⓘ
- 1 lb. ground chicken ⓘ
- 1/2 lb. chicken giblets, chopped ⓘ
- 1 tsp. gumbo file ⓘ
- 2 tsp. salt ⓘ
- 1/4 tsp. black pepper ⓘ
- 1/4 tsp. cayenne red pepper ⓘ
- 1 cup chicken broth ⓘ
- 3 cups hot cooked rice with parsley ⓘ
Instructions
- Heat oil in a Dutch oven over medium heat.
- Add chopped onion, celery, green bell pepper, minced garlic, and flour.
- Cook until the flour turns a deep red-brown, stirring constantly to prevent burning.
- Stir in ground chicken, chopped chicken giblets, salt, black pepper, and cayenne red pepper. Cook until the meat is browned.
- Add chicken broth, cover, and simmer for 25 minutes.
- Stir in cooked rice and chopped onion tops.
- Cook for another 5 minutes, then serve hot.
