Ingredients

  • 8 to 10 sliced and boiled potatoes
  • 1 stick butter
  • 3 Tbsp. flour
  • 2 cups milk
  • 1 cup Velveeta cheese
  • 1/2 stick butter
  • 1 roll Ritz crackers
  • Shredded Cheddar cheese
  • 1 (8 oz.) package cream cheese
  • 1 (8 oz.) tub sour cream
  • 1 (8 oz.) tub sour cream

Instructions

  1. Slice and boil the potatoes until tender, then drain.
  2. In a large mixing bowl, whip the potatoes with butter, flour, milk, Velveeta cheese, cream cheese, and sour cream until smooth.
  3. Pour the mixture into a 9 x 13-inch baking dish.
  4. Refrigerate overnight or up to 2 weeks if preparing in advance.
  5. When ready to bake, preheat oven to 350°F and bake for 20 minutes.
  6. Sprinkle shredded Cheddar cheese on top and bake for an additional 10 minutes until cheese is melted and bubbly.
