Ingredients

  • 1/2 lb. scallops
  • 1 Tbsp. instant minced onion
  • 1 whole green onion, thinly sliced
  • 1 1/2 Tbsp. sherry wine
  • 1 Tbsp. tomato paste
  • 4 plum tomatoes, diced
  • 2 Tbsp. minced fresh cilantro
  • freshly ground pepper to taste
  • 2 Tbsp. crumbled Feta cheese
  • 1 1/4 c. cooked rice

Instructions

  1. Pat scallops dry with paper towels.
  2. Place scallops, minced onion, sherry wine, tomato paste, diced tomatoes, and sliced green onion in a microwaveproof 1-quart casserole.
  3. Toss together until well mixed. Cover with lid or vented plastic wrap.
  4. Microwave on High for 3 1/2 to 4 minutes or until scallops are opaque, stirring once halfway through.
  5. Sprinkle with freshly ground pepper and crumbled Feta cheese. Toss to combine.
  6. Spoon over cooked rice in deep bowls and serve.
