Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 1/2 cup milk
  • 2 eggs
  • 3/4 cup raisins

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Grease an 8-inch round pan.
  3. Combine the all-purpose flour, sugar, baking powder, and salt in a bowl.
  4. Cut in the butter with a fork until the mixture resembles coarse crumbs.
  5. Add the milk, beaten eggs, and raisins to the mixture.
  6. Stir until the dry ingredients are moistened.
  7. Pat half of the dough with floured hands into the greased pan and spread jam of your choice over it.
  8. Top with the remaining dough evenly over the jam.
  9. Score the dough into 8 wedges and brush the top with melted butter and sprinkle with sugar.
  10. Bake for 20 to 25 minutes until golden brown.
