Ingredients

  • 1 lb. pinto beans
  • 3 (14 oz.) cans stewed tomatoes
  • 2 cloves minced garlic
  • 1 lb. chopped green peppers
  • 1 1/2 lb. sliced onions
  • 1/2 cup chopped parsley
  • 3 lb. lean ground beef
  • 2 tablespoons oil
  • 1/3 cup chili powder
  • 2 teaspoons salt
  • 3 1/2 teaspoons cumin seed

Instructions

  1. Wash beans and soak in water overnight.
  2. Simmer beans in covered pot for 2 to 3 hours until tender, using the same water.
  3. Add stewed tomatoes to the bean mixture and simmer for 5 minutes.
  4. Saute minced garlic, sliced onions, and chopped green peppers in 1 tablespoon of oil for 15 minutes.
  5. Add the sautéed vegetables to the bean mixture.
  6. Brown the lean ground beef in a skillet and drain excess fat.
  7. Add the browned beef to the bean mixture.
  8. Add chili powder, salt, and cumin seed to the mixture and simmer covered for 2 hours.
  9. Remove the cover and cook slowly for an additional 30 minutes.
