Ingredients

  • 2 (8 x 10-inch) pans corn bread
  • 1 1/2 lb. shrimp, cleaned
  • 1 lb. Bob Evans sausage
  • 5 medium onions
  • 7 stalks celery
  • 2 bell peppers
  • 4 oz. dried Shiitake mushrooms
  • 1 tsp. cayenne pepper
  • 1 tsp. black pepper
  • 1 tsp. white pepper
  • 1 tsp. sage
  • 1 tsp. salt
  • 4 or 5 cloves garlic
  • about 3 sticks margarine

Instructions

  1. Cut the sausage into slices, then quarter and fry until browned.
  2. Remove the sausage from the pan and set aside.
  3. Saute 1/2 of the onions, peppers, and celery in at least 2 sticks of margarine until vegetables begin to change color.
  4. Add the remaining vegetables, another stick of margarine, sliced mushrooms, cayenne pepper, black pepper, white pepper, sage, salt, and crushed garlic; cook until fragrant.
  5. Mix in the cooked sausage pieces and combine well.

Tips & Substitutions

For a deeper flavor, consider using a mix of fresh seafood, like crab or scallops, in addition to the shrimp. If Shiitake mushrooms are unavailable, any dried mushrooms will work, just adjust the soaking time. To reduce fat, substitute some margarine with vegetable broth or olive oil. Don’t forget to taste and adjust seasoning to your preference.

Serving Suggestions

This seafood dressing is fantastic served on its own or as a stuffing for poultry. Pair it with a fresh green salad or roasted vegetables for a complete meal. It also complements dishes like Quick Seafood Surprise or Smoked Trout Dip A'La Mk, enhancing a seafood-themed feast.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to three days. To reheat, place the dressing in an oven-safe dish, cover with foil, and warm in a preheated oven at 350°F for about 20 minutes, or until heated through. This helps retain moisture and flavor.

Frequently Asked Questions

Can I make this seafood dressing ahead of time?

Absolutely! You can prepare the dressing a day in advance. Just follow the recipe, let it cool, and store it covered in the refrigerator. When ready to serve, simply reheat in the oven as mentioned.

Can I use different types of seafood?

Yes, feel free to substitute the shrimp with other seafood like crab or lobster for a luxurious twist. Just ensure that the seafood is cooked before adding it to the dressing to avoid overcooking.

Is it possible to make this dish vegetarian?

Certainly! You can replace the shrimp and sausage with plant-based alternatives, like tempeh or a mix of hearty vegetables and legumes for texture. Use vegetable broth instead of margarine for sautéing to keep it vegetarian-friendly.
