  • 2 Tbsp. grated Parmesan cheese
  • chopped ripe olives (optional)

Instructions

  1. In a small mixing bowl, combine taco sauce and sour cream. Set aside.
  2. In a blender, food processor, or bowl, blend cottage cheese, milk, garlic, and salt until smooth. Set aside.
  3. Reserve 1 tablespoon of sliced green onion.
  4. Spread 1 tablespoon of taco sauce mixture over each tortilla.
  5. Top each tortilla with shredded cheese, seafood, and remaining green onion.
  6. Spoon remaining taco sauce mixture into the bottom of a greased 12 x 7 1/2 x 2-inch baking dish.
  7. Roll up the tortillas and place seam side down in the baking dish.
  8. Pour the cottage cheese mixture over the tortillas and sprinkle with grated Parmesan cheese.
  9. Bake uncovered at 350°F for 25 to 30 minutes.
