  • 1/2 c. chopped onion
  • 1 red bell pepper
  • 5 jalapeno peppers
  • 2 Tbsp. bottled minced garlic
  • 1 lime
  • 1/2 c. dry white wine
  • 1/3 c. fresh parsley leaves
  • 2 Tbsp. fresh cilantro leaves
  • 1/2 tsp. salt
  • 1 lb. medium shrimp, shelled and deveined
  • 1/4 c. fresh grated Parmesan cheese
  • Tabasco sauce

Instructions

  1. Bring 2 1/2 quarts of unsalted water to a boil in a 4 1/2-quart Dutch oven or soup pot.
  2. When the water boils, add the linguine and cook until just tender, 10 to 11 minutes.
  3. While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.
  4. Add the chopped onion, red bell pepper, and jalapeno peppers; sauté until vegetables are tender, about 5 minutes.
  5. Stir in the bottled minced garlic and cook for another minute.
  6. Add the dry white wine and cook until slightly reduced, about 2-3 minutes.
  7. Squeeze the juice of 1 lime into the skillet and stir.
  8. Add the shrimp to the skillet, season with 1/2 teaspoon salt, and cook until pink and opaque, about 3-4 minutes.
  9. Drain the cooked linguine and add it to the skillet with the shrimp and vegetables.
  10. Stir in the chopped parsley and cilantro leaves, and cook for 1-2 minutes to combine flavors.
  11. Remove from heat and sprinkle with fresh grated Parmesan cheese.
  12. Serve immediately, passing Tabasco sauce at the table if desired.

Tips & Substitutions

For added flavor, consider marinating the shrimp in lime juice and garlic for 15 minutes before cooking. If you want a milder dish, reduce the number of jalapenos or use poblano peppers instead. Fresh ingredients yield the best results, so opt for fresh herbs over dried ones. This dish can also be adapted with other proteins like chicken or tofu for a different twist.

Serving Suggestions

Serve this dish with a side of crusty bread to soak up the flavorful sauce, or pair it with a fresh green salad for a complete meal. A glass of chilled white wine complements the flavors beautifully. For a festive touch, consider serving it alongside a refreshing Salsa Shrimp Dip as an appetizer.

Storage & Reheating

To store leftovers, place the linguine and shrimp in an airtight container and refrigerate for up to 2 days. When reheating, add a splash of water or broth to keep it moist and prevent sticking. Heat gently in a skillet over medium heat or in the microwave until warmed through. Avoid overheating to maintain the shrimp's texture.

Can I use a different type of pasta instead of linguine?

Yes, you can substitute linguine with other pasta shapes like fettuccine, spaghetti, or even penne. Just ensure to adjust the cooking time according to the pasta type to achieve the perfect texture.

How can I make this dish spicier?

To increase the heat, you can add more jalapenos or include a pinch of cayenne pepper or red pepper flakes during cooking. Additionally, serving with a few dashes of Tabasco sauce will enhance the spiciness if desired.

Can I prepare this recipe in advance?

While it's best enjoyed fresh, you can prepare the shrimp and vegetable mixture ahead of time. Store it separately from the cooked pasta. When ready to serve, reheat the mixture, add the pasta, and finish with the herbs and cheese for a quick meal.
