Seafood Lasagna
Seafood Lasagna offers a rich and creamy combination of shrimp, crab, and cheese layered between tender pasta sheets. Ingredients
- 8 lasagna noodles ⓘ
- 1 cup chopped onion
- 2 Tbsp butter or oleo ⓘ
- 1 (8 oz) package cream cheese softened ⓘ
- 1 1/2 cups cream-style cottage cheese ⓘ
- 1 beaten egg ⓘ
- 2 tsp dried basil crushed ⓘ
- 2 cans cream of mushroom soup ⓘ
- 1/3 cup milk ⓘ
- 1/3 cup dry white wine
- 1 lb shelled shrimp cooked and halved ⓘ
- 1 (7.5 oz) can crabmeat drained and flaked ⓘ
- 1/4 cup grated Parmesan cheese ⓘ
- 1/2 cup shredded sharp cheese ⓘ
Instructions
- Cook lasagna noodles according to package directions; drain. Arrange 4 noodles in the bottom of a greased 13 x 9 x 2-inch baking dish.
- Cook onion in butter until tender; blend in cream cheese. Stir in cottage cheese, egg, basil, 1/2 teaspoon salt and 1/8 teaspoon pepper; spread half of this mixture atop the noodles.
- Combine cream of mushroom soup, milk, and wine in a bowl.
- Stir in cooked and halved shrimp and drained, flaked crabmeat into the soup mixture.
- Spread half of the seafood mixture over the cottage cheese layer.
- Repeat layers with remaining noodles, cottage cheese mixture, and seafood mixture.
- Sprinkle grated Parmesan cheese over the top layer.
- Bake, uncovered, in a 350°F oven for 45 minutes.
- Top with shredded sharp cheese and bake for an additional 2 to 3 minutes until melted.
- Let stand for 15 minutes before serving. Garnish with tomato, parsley, and extra shrimp if desired.
