  • 3/4 c. mayonnaise
  • 2 Tbsp. lemon juice
  • 1/4 tsp. pepper
  • 6 to 8 large tomatoes

Instructions

  1. Combine rice, shrimp, crabmeat, eggs, celery, pepper, onion, pickles, and pimentos in a bowl. Mix well.
  2. Cut the tops off the tomatoes and scoop out the insides, leaving a hollow shell.
  3. Stuff each tomato with the seafood and rice mixture.
  4. Replace the tomato tops if desired and chill before serving.
