A hearty Southern-inspired stew featuring tender veal, rich flavors from red wine and consommé, complemented by sweet onions and served over noodles for a satisfying meal.

Ingredients

  • 1 1/2 lb veal, cubed
  • 3 Tbsp shortening
  • 2 Tbsp flour
  • 1 1/2 cup consommé
  • 1/2 cup dry red wine
  • 12 small onions, peeled
  • salt and pepper to taste
  • 12 oz package noodles, cooked

Instructions

  1. Brown the veal in shortening in a heavy metal pot.
  2. Remove the veal and set aside.
  3. Stir the flour into the pan drippings and cook for 2 minutes, stirring constantly.
  4. Remove from heat and add the consommé and red wine, mixing well.
  5. Cook until thickened and smooth, stirring constantly.
  6. Add the veal and peeled onions.
  7. Season with salt and pepper.
  8. Simmer, covered, for 1 1/2 hours.
  9. Serve over a bed of cooked noodles.
