Ingredients

  • 2 Tbsp canola oil or Pam
  • 2 Tbsp finely chopped onions
  • 2 c thawed frozen chopped spinach
  • 1/2 c chicken broth
  • 1 tsp garlic
  • pepper to taste
  • 1 c part skim ricotta cheese
  • 1/4 c skim milk
  • dash of nutmeg
  • 2 Tbsp Parmesan cheese
  • 6 medium pasta shells

Instructions

  1. Preheat oven to 425°F.
  2. Spray an 8-inch square pan with cooking spray or canola oil.
  3. Heat oil in a skillet; sauté chopped onions and garlic until translucent.
  4. Add chopped spinach, chicken broth, and pepper; cook until heated through.
  5. Stir in ricotta cheese and skim milk until well combined.
  6. Add a dash of nutmeg and 1 tablespoon of Parmesan cheese; mix well.
  7. Gently fold in the cooked pasta shells.
  8. Transfer the mixture to the prepared baking pan.
  9. Sprinkle with remaining 1 tablespoon of Parmesan cheese on top.
  10. Bake for 20 minutes until golden and bubbly.
