Ingredients

  • 1 can Shoepeg corn, drained
  • 1 can whole green beans, drained
  • 1 small jar pimentos, chopped
  • 1 cup celery, chopped
  • 1 cup bell pepper, chopped
  • 1 bunch green onions or 1 onion, chopped
  • 1 can small peas, drained
  • 3 packages Equal sweetener
  • 3/4 cup vinegar
  • 1/4 cup oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons water

Instructions

  1. Bring the vinegar, oil, salt, pepper, and water to a boil in a saucepan.
  2. Once boiling, add the sweetener and stir until dissolved.
  3. Pour the hot mixture over the drained vegetables and chopped pimentos.
  4. Mix well to combine.
  5. Chill the salad overnight before serving.
