Ingredients

  • 2 cups raw rice
  • 3/4 cup butter
  • 1 medium chopped onion
  • 1 medium chopped bell pepper
  • 1 can onion soup
  • 1 can celery soup
  • 1 can Ro-Tel tomatoes
  • 2 pounds raw shrimp
  • 4 sprigs parsley
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Melt butter in a casserole dish.
  2. Cut up and blend all ingredients together, including rice, butter, onion, bell pepper, onion soup, celery soup, Ro-Tel tomatoes, shrimp, parsley, salt, and pepper.
  3. Bake for 1 hour at 250°F.
  4. Stir the casserole after 30 minutes of baking.
