Shrimp Enchiladas feature tender salad shrimp wrapped in soft flour tortillas, smothered in a creamy mushroom and pimento sauce, topped with melted cheese. Ingredients

  • 8 flour tortillas
  • 1 lb tiny salad shrimp
  • 2 cans cream of mushroom soup
  • 1 bunch green onions
  • 1 jar pimento
  • 8 oz cream cheese
  • 1 Tbsp margarine
  • shredded Colby cheese

Instructions

  1. Melt margarine in a skillet and sauté chopped green onions until tender.
  2. Add undiluted cream of mushroom soup and heat through.
  3. Stir in cream cheese and cook until melted.
  4. Mix in half of the pimento from the jar.
  5. Fill each flour tortilla with the shrimp and sauce mixture, then fold over.
  6. Place filled tortillas in a baking dish, pour the remaining sauce and pimento over them.
  7. Sprinkle shredded Colby and Monterey Jack cheese on top.
  8. Bake in a preheated oven until hot and cheese is melted.
