Ingredients

  • 2 lb. large shrimp, shelled and deveined
  • 1 stick butter
  • 2 c. green onions, chopped
  • 1/2 lb. fresh mushrooms, sliced
  • 2 c. chicken broth
  • 3/4 c. white Sauterne wine
  • 1 lb. macaroni shells
  • 2 c. canned peeled tomatoes, crushed
  • 1/2 tsp. pepper
  • salt
  • 1/2 c. grated Parmesan cheese

Instructions

  1. In a large saucepan over moderately high heat, sauté the shrimp in 1 stick of butter until they turn pink.
  2. Stir in chopped green onions and sliced mushrooms.
  3. Sauté about 7 minutes or until vegetables are soft.
  4. Using a slotted spoon, transfer the shrimp to a bowl and keep warm.
  5. Add chicken broth, white Sauterne wine, canned crushed tomatoes, pepper, and salt to the saucepan.
  6. Bring to a boil, then reduce heat and simmer until flavors meld, about 10 minutes.
  7. Cook macaroni shells according to package instructions, drain.
  8. Combine cooked macaroni with the sauce and shrimp.
  9. Sprinkle with grated Parmesan cheese before serving.
