Ingredients

  • 1 lb. shrimp
  • 1 1/2 sticks butter
  • 1/4 cup chopped scallions
  • 3/4 teaspoon salt
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon basil
  • 1/4 teaspoon thyme
  • 1/2 teaspoon oregano
  • 1/2 lb. sliced mushrooms
  • 3 tablespoons chopped parsley
  • 6 tablespoons chicken broth
  • rice

Instructions

  1. Melt 1 stick of butter in a skillet over medium heat.
  2. Add chopped scallions, salt, minced garlic, cayenne pepper, black pepper, basil, thyme, and oregano. Stir to combine.
  3. Add the shrimp to the skillet and cook until they turn pink and are cooked through.
  4. Add sliced mushrooms and pour in 6 tablespoons of chicken broth. Cook until mushrooms are tender.
  5. Add the remaining butter in chunks and stir until melted and incorporated.
  6. Add chopped parsley and 2 tablespoons of chicken broth to the skillet to thicken the sauce.
  7. Pour the shrimp and sauce mixture over cooked rice and serve.
