Ingredients

  • 3 chicken breasts
  • 1 carrot, chopped
  • 1 small onion, chopped
  • 1 teaspoon salt
  • 20 oz. frozen broccoli
  • 10.5 oz. cream of chicken soup
  • 2/3 cup mayonnaise
  • 1/3 cup evaporated milk
  • 1/2 cup grated Cheddar cheese
  • 1 teaspoon lemon juice
  • 1/2 teaspoon curry powder
  • 1 tablespoon melted butter
  • 1/2 cup bread crumbs

Instructions

  1. Boil chicken breasts with salt until tender, then drain and set aside.
  2. Cook frozen broccoli, chopped carrot, and chopped onion until tender, then drain.
  3. Place the cooked chicken and vegetables in a buttered baking dish.
  4. In a bowl, mix cream of chicken soup, mayonnaise, evaporated milk, grated Cheddar cheese, lemon juice, and curry powder.
  5. Spread the mixture evenly over the chicken and vegetables in the baking dish.
  6. Sprinkle bread crumbs evenly over the top.
  7. Drizzle melted butter over the bread crumbs.
  8. Bake at 350°F (175°C) for 25 to 30 minutes until bubbly and golden.
