Ingredients

  • 1 cup cooked, shelled shrimp
  • salt and pepper
  • pinch of tarragon
  • 3 large eggs
  • enough milk or cream to make 1 1/2 cups total
  • 3 tablespoons grated Swiss cheese
  • 2 tablespoons butter

Instructions

  1. Saute the shrimp with the butter, salt, pepper, and tarragon for 1 minute.
  2. Add the vermouth and boil for 1/2 minute.
  3. Strew the cooked shrimp in the pie shell.
  4. Make a custard by blending the eggs with enough milk or cream to make 1 1/2 cups in total.
  5. Pour the custard into the pie shell, filling it within 1/8-inch of the rim.
  6. Sprinkle the grated Swiss cheese on top.
  7. Bake the pie at 375°F for 30 to 35 minutes or until puffed and browned.
