Ingredients

  • 8 oz. butterflake dinner rolls
  • 1 egg
  • 2 Tbsp. green onion
  • 1/4 tsp. cayenne
  • 4 oz. small cooked shrimp
  • 1/2 c. heavy cream
  • 1/2 tsp. salt
  • 1/2 c. shredded Swiss cheese

Instructions

  1. Generously grease 2 dozen 1 3/4-inch muffin cups; set aside.
  2. Separate the rolls into 12 equal pieces.
  3. Cut each piece in half; press each half into the bottom and sides of a muffin cup to form pastry shells.
  4. Divide the small cooked shrimp evenly among the pastry shells.
  5. Beat together the egg, heavy cream, chopped green onion, salt, and cayenne until well blended.
  6. Using about 2 teaspoons for each, divide the egg mixture evenly among the pastry shells.
  7. Sprinkle shredded Swiss cheese over the tops of each filled pastry shell.
  8. Bake uncovered in a 375°F oven for 20 minutes, or until edges are browned and the center appears set.
  9. Cool for 5 minutes to serve warm, or remove from pans and cool completely on racks, then package airtight and freeze.
