  • 1 stalk celery with leaves, chopped

  • 1 1/2 lb. uncooked fresh or frozen shrimp, peeled and deveined
  • 1/4 c. tarragon vinegar
  • 1 c. celery
  • 3 hard-boiled eggs, cut in eighths
  • 1/4 c. mayonnaise

Instructions

  1. Combine water, chopped celery with leaves, salt, vinegar, pickling spices or shrimp spice, parsley, bay leaf, and additional salt in a pot; bring to a boil.
  2. Add shrimp; cover and bring to a boil again.
  3. Lower heat; simmer gently until shrimp turn pink, about 5 minutes.
  4. Drain the cooked shrimp and spices.
  5. Add tarragon vinegar; let stand about 30 minutes.
  6. Drain the shrimp thoroughly.
  7. Add cooked shrimp, chopped celery, hard-boiled eggs, and mayonnaise; toss lightly to combine.
  8. Chill well before serving.
  9. Serve in lettuce cups and top with additional mayonnaise if desired.
