Ingredients

  • 1 unbaked pie shell
  • 4 oz. grated Mozzarella cheese
  • 2 cups peeled tomatoes
  • 1/4 lb. sliced salami
  • 1 medium onion
  • 1 medium green pepper
  • 3 eggs
  • 3/4 cup milk
  • 2 tsp. onion powder
  • 3 Tbsp. parsley
  • 1 tsp. oregano
  • 1/2 tsp. garlic powder

Instructions

  1. Preheat the oven to 450°F (230°C). Prick the unbaked pie shell and bake for 8 minutes.
  2. Saute the minced onion and diced green pepper until tender.
  3. Layer half of the cheese, peeled tomatoes, sautéed onion and green pepper mixture, and sliced salami into the baked pie shell.
  4. Repeat the layering with the remaining ingredients.
  5. Beat the eggs in a bowl; stir in the milk, onion powder, parsley, oregano, and garlic powder.
  6. Pour the egg mixture over the layered ingredients in the pie shell.
  7. Bake at 450°F (230°C) for 10 minutes, then reduce the temperature to 350°F (175°C) and continue baking for 35 to 40 minutes until set.
