Ingredients

  • pastry for 9-inch deep-dish pie
  • 6 oz. can lump crabmeat, drained
  • 4 oz. shredded Mozzarella cheese
  • 1/3 cup minced green onions
  • 1 Tbsp. minced fresh parsley
  • 4 eggs, beaten
  • 2 cups half and half
  • 1/2 tsp. salt
  • red pepper

Instructions

  1. Line a 9-inch quiche dish or deep-dish pie plate with pastry. Trim excess around edges.
  2. Prick bottom and sides of pastry with a fork.
  3. Bake at 425°F for 5 minutes.
  4. Cool the pastry.
  5. Sprinkle crabmeat, cheese, green onions, and parsley evenly into the pastry shell.
  6. Combine eggs, half and half, salt, and red pepper, stirring well; pour over the crabmeat mixture.
  7. Bake at 325°F for 35 to 40 minutes or until set.
  8. Let stand for 10 minutes before serving.
  9. Garnish with parsley sprigs, if desired.
