Ingredients

  • 3 c. cooked chicken or turkey strips
  • 1 1/2 c. blanched fresh pea pods
  • 1 c. thin, diagonally sliced carrots
  • 1/2 c. green onion with tops, cut diagonally into 1/2 inch pieces
  • 2/3 c. picante sauce
  • 1 1/2 Tbsp. soy sauce
  • 1 tsp. sesame oil
  • 1 tsp. sugar
  • 3 c. shredded lettuce
  • 1/4 c. toasted slivered almonds
  • 1 can (3 oz.) chow mein noodles

Instructions

  1. Combine cooked chicken or turkey strips, blanched pea pods, sliced carrots, and green onion in a large bowl.
  2. In a separate small bowl, mix together picante sauce, soy sauce, sesame oil, and sugar until well blended.
  3. Pour the sauce mixture over the chicken and vegetable mixture and toss to coat evenly.
  4. Chill the salad before serving. Just before serving, top with shredded lettuce, toasted slivered almonds, and chow mein noodles.
