Ingredients

  • 1/2 (12 oz.) package medium noodles
  • 1 lb. beef flank steak, cut into 1-inch cubes
  • 3 medium carrots, sliced thin
  • 2 medium onions, sliced thin
  • 1 (10 to 12 oz.) package mushrooms, halved
  • 2 Tbsp. Kikkoman soy sauce
  • 1 Tbsp. catsup
  • 1 1/2 tsp. cornstarch

Instructions

  1. Cook noodles in boiling water until tender, then drain and set aside.
  2. In a medium bowl, combine soy sauce, catsup, cornstarch, and 1/2 teaspoon of salt.
  3. Add beef flank steak to the mixture and stir until well coated.
  4. In a skillet over medium-high heat, add 2 teaspoons of oil and cook carrots and onions until crisp and lightly browned. Remove to another bowl.
  5. In the same skillet over high heat, add 2 more teaspoons of oil and cook mushrooms until tender and liquid evaporates. Remove to the bowl with vegetables.
  6. Add the steak to the skillet with the remaining mixture and cook about 5 minutes until browned.
  7. Stir in the cooked vegetables and 1/2 cup of water; heat through, stirring occasionally.
  8. Serve the steak and vegetables over the cooked noodles.

Tips & Substitutions

For a richer flavor, consider marinating the beef in the soy sauce mixture for at least 30 minutes before cooking. If you don't have flank steak, sirloin or chuck can be great alternatives. Feel free to add other vegetables like bell peppers or peas for extra color and nutrition. For a gluten-free version, use tamari instead of soy sauce.

Storage & Reheating

Frequently Asked Questions

Can I use different types of noodles in this recipe?

Absolutely! While medium noodles work well, you can substitute with egg noodles, rice noodles, or even whole wheat pasta for a healthier option. Just adjust the cooking time according to the type of noodles you choose to ensure they are perfectly cooked.

What can I do if I don't have cornstarch?

If you don't have cornstarch, you can use all-purpose flour as a thickening agent instead. Simply use about twice as much flour as cornstarch. Alternatively, you can skip the thickener altogether if you prefer a brothier stew.

How can I make this stew spicier?

For a spicy kick, add crushed red pepper flakes or a dash of hot sauce to the beef mixture. You could also incorporate diced jalapeños or a splash of Sriracha while cooking the vegetables. Adjust the heat level according to your preference for a customized flavor!
