Ingredients

  • 4 slices bacon
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 1 (14 1/2 oz.) can hominy
  • 4 large eggs
  • pepper to taste
  • 1/2 to 1 cup shredded Cheddar cheese

Instructions

  1. Fry bacon until crisp, then drain on toweling and crumble.
  2. Pour off all drippings except 1 tablespoon.
  3. Add chopped onion, chopped green pepper, and hominy to the skillet.
  4. Cook gently, stirring often until the onion is yellow.
  5. Beat eggs and add pepper to taste.
  6. Pour eggs over the hominy mixture.
  7. Sprinkle with bacon crumbles, cover, and cook gently until eggs are set.
  8. Sprinkle with shredded Cheddar cheese, cover, and let stand off heat until cheese melts and eggs are done.
