Ingredients

  • 1 1/2 cups brown sugar
  • 2/3 cup vegetable oil
  • 1 egg
  • 1 cup buttermilk
  • 1 1/2 cups apples, diced
  • 2 1/2 cups plain flour
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 1 teaspoon vanilla extract
  • 1/2 cup pecans, chopped

Instructions

  1. In a bowl, combine brown sugar, vegetable oil, and beaten egg.
  2. In another bowl, combine plain flour, salt, and soda, mixing well.
  3. Add the flour mixture to the sugar mixture alternately with the buttermilk, mixing well after each addition.
  4. Fold in the diced apples and chopped pecans.
  5. Pour the batter into muffin pans that have been sprayed with non-stick spray or Pam.
  6. Bake in a preheated oven at 375°F (190°C) for about 25 minutes, or until a toothpick inserted into the center comes out clean.
