Ingredients

  • 1 (9-inch) frozen ready-to-bake pie crust, defrosted
  • 4 oz. cubed, cooked, lean ham or Canadian bacon
  • 1 small onion, finely minced
  • 1/2 cup (2 oz.) shredded Swiss or other part-skim white cheese
  • 3 eggs
  • 1 cup skim milk
  • 3/4 cup 99% fat-free cottage cheese
  • 1 teaspoon salt
  • 1 teaspoon prepared mustard
  • pinch of pepper
  • 1 1/2 tablespoons parsley flakes

Instructions

  1. Have the pie crust at room temperature.
  2. Remove it from its pie pan and place it in a straight-sided 9-inch nonstick round cake pan.
  3. Press the pastry thinly to fit the pan.
  4. Trim away and discard the excess pastry that overlaps the edges.
  5. Preheat the oven to 375°F (190°C).
  6. In a bowl, whisk together eggs, skim milk, cottage cheese, salt, mustard, and pepper.
  7. Spread the ham, onion, and cheese evenly over the prepared pie crust.
  8. Pour the egg mixture over the fillings.
  9. Sprinkle parsley flakes on top.
  10. Bake for approximately 30 minutes or until the filling is set and lightly golden.
  11. Let cool slightly before slicing and serving.
