Slim Quiche Lorraine

Ingredients
- 1 (9-inch) frozen ready-to-bake pie crust, defrosted ⓘ
- 4 oz. cubed, cooked, lean ham or Canadian bacon ⓘ
- 1 small onion, finely minced ⓘ
- 1/2 cup (2 oz.) shredded Swiss or other part-skim white cheese ⓘ
- 3 eggs ⓘ
- 1 cup skim milk ⓘ
- 3/4 cup 99% fat-free cottage cheese
- 1 teaspoon salt ⓘ
- 1 teaspoon prepared mustard ⓘ
- pinch of pepper ⓘ
- 1 1/2 tablespoons parsley flakes ⓘ
Instructions
- Have the pie crust at room temperature.
- Remove it from its pie pan and place it in a straight-sided 9-inch nonstick round cake pan.
- Press the pastry thinly to fit the pan.
- Trim away and discard the excess pastry that overlaps the edges.
- Preheat the oven to 375°F (190°C).
- In a bowl, whisk together eggs, skim milk, cottage cheese, salt, mustard, and pepper.
- Spread the ham, onion, and cheese evenly over the prepared pie crust.
- Pour the egg mixture over the fillings.
- Sprinkle parsley flakes on top.
- Bake for approximately 30 minutes or until the filling is set and lightly golden.
- Let cool slightly before slicing and serving.
