Ingredients

  • 2 lb. Italian sausage
  • 1 (25 oz.) can tomato sauce

  • 1 lb. chicken liver, chopped very fine

  • 2 tsp. salt
  • 1 c. grated Parmesan cheese
  • red hot pepper to taste

Instructions

  1. Heat a 5-quart saucepan over medium heat.
  2. Add olive oil to the hot pan.
  3. Add Italian sausage cut into 1 1/2-inch pieces and cook until browned.
  4. Push the sausage to one side of the pan.
  5. Add chopped chicken liver and cook a few minutes until very fine and browned.
  6. Mix the liver with the sausage.
  7. Push the mixture to one side of the pan and sauté the chopped onions until transparent.
  8. Mix all ingredients together in the pan.
  9. Add tomato sauce, tomato paste, minced garlic, salt, and pepper to taste.
  10. Add enough water to achieve a thick sauce consistency.
  11. Bring the sauce to a boil, then add grated Parmesan cheese and mushrooms.
  12. Simmer the sauce for 2 to 3 hours, stirring often.
