Ingredients

  • 1 c. butter or margarine
  • 3/4 c. firmly packed brown sugar
  • 3/4 c. plus 1 Tbsp. granulated sugar
  • 2 eggs
  • 1 3/4 c. all-purpose flour
  • 2 c. Quaker oats (quick or old fashioned; uncooked)
  • 2 tsp. cinnamon
  • 1 tsp. soda
  • 1/2 tsp. salt (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a cookie sheet or line it with parchment paper.
  3. In a large bowl, beat together butter, brown sugar, and 3/4 cup granulated sugar until light and fluffy.
  4. Add eggs and mix well.
  5. In a medium bowl, combine flour, oats, 1 teaspoon cinnamon, soda, and salt.
  6. Gradually add the dry ingredients to the sugar mixture and mix well.
  7. Drop spoonfuls of dough onto the prepared cookie sheet.
  8. Bake for 10 minutes or until edges are golden.
  9. Allow cookies to cool slightly before removing from the sheet.
