Ingredients

  • 2 Tbsp butter
  • 1 1/3 cups yellow cornmeal
  • 1 cup sifted flour
  • 1 tsp soda
  • 3 Tbsp sugar
  • 1 1/4 tsp salt
  • 2 cups milk
  • 2 eggs
  • 1 cup buttermilk

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place butter in an 8 x 8-inch Pyrex dish and heat in the oven until melted.
  3. Sift together the dry ingredients: cornmeal, flour, soda, sugar, and salt.
  4. Stir in 1 cup of milk and beaten eggs into the dry mixture.
  5. Add buttermilk and pour the batter into the hot Pyrex dish with melted butter.
  6. Pour the remaining 1 cup of milk evenly over the top of the mixture without stirring.
  7. Bake for 35 minutes until golden and a custard layer forms in the center.
