  • 2 c. shredded, cooked chicken
  • 1 large tomato, peeled and diced
  • 1 large avocado, peeled, pitted, and sliced
  • 1 c. shredded Monterey Jack cheese

Instructions

  1. In a 4-quart saucepan, sauté onion and garlic in olive oil.
  2. Add beef broth, chicken broth, tomato juice, cumin, chili powder, jalapeno, salt, and Worcestershire sauce to the saucepan.
  3. Bring to a boil, then reduce heat and simmer, covered, for 1 hour.
  4. While the soup simmers, cut corn tortillas into narrow strips.
  5. Heat vegetable oil in a skillet and fry the tortilla strips until crisp. Drain on paper towels.
  6. Add cooked chicken and diced tomato to the soup and cook for an additional 5 minutes.

  8. Pour hot soup into the bowls over the tortilla strips.
