Ingredients

  • 3 c. cornmeal
  • 1 Tbsp. sugar
  • 1 1/2 tsp. salt
  • 2 1/2 c. boiling water
  • 1 small sweet potato
  • 1 c. cold water
  • 1 c. all-purpose flour
  • 1 1/4 c. molasses
  • 1/2 tsp. baking soda

Instructions

  1. Combine cornmeal, sugar, and salt in a large bowl.
  2. Pour in boiling water; beat with an electric mixer until well mixed.
  3. Boil the sweet potato until tender; peel while hot.
  4. Add the sweet potato to the meal mixture; beat for 10 minutes.
  5. Add cold water; beat well.
  6. Add flour and molasses; beat well.
  7. Cover the mixture.
  8. Place in a warm, draft-free place overnight.
