Ingredients

  • 2 eggs
  • 2 cups milk
  • 1/2 cup butter or margarine, melted
  • 2 cups self-rising flour
  • 2 cups yellow cornmeal
  • 2 Tbsp. sugar
  • 1/2 cup chopped onions
  • 1/2 cup pork fried cracklings
  • 1/2 tsp. chili powder

Instructions

  1. Preheat oven to 425°F.
  2. Butter a 9-inch square baking pan.
  3. Lightly beat eggs with milk and melted butter; set aside.
  4. In another bowl, combine self-rising flour, yellow cornmeal, sugar, and chili powder.
  5. Stir in the milk mixture until combined.
  6. Fold in chopped onions and broken pork cracklings.
  7. Spread batter evenly into the prepared pan.
  8. Bake for 25 to 30 minutes or until top is golden brown.
  9. Insert a fork into the center; if it comes out clean, the cornbread is done.
  10. Cool in the pan, then cut into pieces and serve.
