Ingredients

  • 1 cup bacon drippings
  • 4 cups crumbled cornbread
  • 1 teaspoon toasted poultry seasoning
  • 1/4 teaspoon pepper
  • 2 cups heated chicken broth
  • 1 1/2 cups finely chopped onions
  • 1 package herb seasoned stuffing mix (about 4 cups)
  • 2 cups chopped pecans
  • 1 teaspoon salt
  • 3 eggs

Instructions

  1. In a large saucepan or Dutch oven, melt bacon drippings until hot.
  2. Add chopped celery and onions; cook over medium-low heat until tender.
  3. Stir in herb seasoned stuffing mix, crumbled cornbread, chopped pecans, toasted poultry seasoning, pepper, and salt; toss lightly.
  4. Add lightly beaten eggs and toss to combine.
  5. Pour hot chicken broth over the mixture and toss again to evenly distribute.
  6. Serve hot, yielding about 14 cups, approximately 220 calories per 1/2 cup serving.
