  • 4 boneless, skinless chicken breasts or thighs

  • margarine or oil
  • 1 onion, sliced thin
  • 1 clove garlic, minced
  • 1 red pepper, cored, seeded and sliced thin
  • 3 carrots, peeled and sliced lengthwise
  • 2 zucchini, sliced lengthwise
  • 1/4 cup white wine or sweet or dry sherry
  • 1/2 teaspoon basil
  • 1/2 teaspoon marjoram
  • 1/2 teaspoon thyme
  • salt and pepper or seasoned salt

  1. Dredge chicken pieces in seasoned flour, shaking off excess, then in skillet, heat margarine or oil.
  2. Saute chicken, turning once, until cooked through, about 10 minutes. Remove from pan and keep warm.
  3. Add more fat to pan if necessary, then add sliced onion and minced garlic. Saute until fragrant.
  4. Add sliced red pepper and cook for a few minutes.
  5. Add peeled and sliced carrots, saute a few minutes, then add sliced zucchini, cooking until each vegetable is tender.
  6. Return cooked chicken to the pan.
  7. Sprinkle herbs, salt, and pepper over the ingredients, then add white wine or sherry.
  8. Cover and sauté for several minutes until chicken is hot and flavors meld, adding more liquid if necessary.
