Ingredients

  • 1 cup yellow cornmeal
  • 1 tablespoon baking powder
  • 1 1/2 teaspoon salt
  • 2 eggs
  • 2/3 cup melted butter
  • 1 cup sour cream
  • 2 cups cooked corn kernels
  • 1/4 pound Cheddar cheese grated
  • 4 ounces canned chopped green chiles

Instructions

  1. Preheat oven to 375°F.
  2. Grease a 9-inch square pan.
  3. Mix dry ingredients together and make a well in the center.
  4. Add eggs, melted butter, and sour cream; blend thoroughly.
  5. Fold in cooked corn kernels.
  6. Pour half of the batter into the prepared pan.
  7. Sprinkle grated cheese and chopped green chiles over the batter.
  8. Pour the remaining batter over the top.
  9. Bake for 30 to 40 minutes until golden and cooked through.
