Ingredients

  • 1 cup buttermilk baking mix
  • 3/4 cup grated Parmesan cheese
  • 4 large eggs
  • 1 tablespoon chopped parsley
  • 3 cups thinly sliced zucchini
  • 1 cup shredded carrot
  • 1 small onion chopped
  • 1 medium clove garlic crushed

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 13 x 9 x 2-inch baking dish and set aside.
  3. In a bowl, mix buttermilk baking mix, grated Parmesan cheese, eggs, chopped parsley, sliced zucchini, shredded carrot, chopped onion, crushed garlic, salt, pepper, and salad oil until well combined.
  4. Spoon the mixture into the prepared baking dish and spread evenly.
  5. Bake for 35 minutes or until golden brown and set.
  6. Remove from oven and let cool slightly before cutting into squares.
  7. Serve warm or at room temperature.
