Ingredients

  • 1/3 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne
  • 2 cups chopped fresh or canned tomatoes
  • 1/2 cup tomato puree
  • 1/2 cup chopped celery
  • 4 tablespoons oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon tamari soy sauce

Instructions

  1. In a large pot, heat the oil over medium heat.
  2. Add chopped onion, chopped green pepper, and chopped celery; sauté until vegetables are tender.
  3. Stir in cumin and cayenne pepper; cook for another minute.
  4. Add chopped tomatoes and tomato puree; bring to a simmer.
  5. Reduce heat and let it simmer for about 20-30 minutes to develop flavors.
  6. Season with salt and tamari soy sauce; adjust to taste.
  7. Serve hot, garnished as desired.
