Ingredients

  • 1 cup sliced almonds
  • 3/4 cup sugar
  • 1/2 cup margarine, softened
  • 1 can crushed pineapple in syrup or juice
  • 1 tablespoon grated orange peel
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Toast 3/4 cup sliced almonds and set aside, saving the remaining 1/4 cup for topping.
  2. Beat sugar and softened margarine in a large bowl until light and fluffy.
  3. Beat in egg until blended.
  4. Stir in undrained crushed pineapple and grated orange peel.
  5. Combine flour, baking powder, baking soda, and ground nutmeg in a medium bowl.
  6. Gradually beat the dry mixture into the pineapple mixture until blended.
  7. Stir in 3/4 cup toasted almonds and chopped dates.
  8. Pour batter into a greased 9 x 5-inch loaf pan.
  9. Sprinkle the remaining 1/4 cup untoasted almonds on top.
  10. Bake at 350°F (175°C) for 55 to 60 minutes.
