Ingredients

  • 1 medium spaghetti squash
  • 2 Tbsp. olive oil
  • 2 crushed cloves garlic
  • 1 medium green pepper, chopped
  • 1 can Del Monte Italian tomatoes, drained
  • 3/4 c. grated Mozzarella cheese
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • 1 medium onion, chopped

Instructions

  1. Scoop out the seeds of the spaghetti squash and place it cut side down in 1-inch water in a metal pan.
  2. Cover the pan with foil.
  3. Bake at 350°F for approximately 1 hour until the squash is soft.
  4. Drain the cooked squash and set aside.
  5. In a skillet, heat the olive oil over medium heat.
  6. Add the chopped onion and cook until translucent.
  7. Add the crushed garlic and cook for another minute.
  8. Cook the ground beef or turkey until browned and cooked through.
  9. Add the drained Italian tomatoes, chopped green pepper, basil, and oregano to the meat mixture.
  10. Simmer for 10 minutes to combine flavors.
  11. Mix the cooked meat and vegetables with the shredded spaghetti squash.
  12. Top with grated mozzarella cheese and serve hot.
