Ingredients

  • 10 oz. frozen lima beans
  • 1 lb. ground beef
  • 1/2 cup chopped celery
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped onion
  • 2 (1 lb.) cans pork and beans
  • 6 oz. can tomato paste
  • 1 cup water
  • 1 Tbsp. chili powder
  • 1/2 tsp. salt
  • tortilla chips

Instructions

  1. Cook lima beans until almost tender.
  2. Drain the lima beans.
  3. Brown ground beef in a skillet.
  4. Add chopped celery, green pepper, and onion to the skillet.
  5. Cook until vegetables are well done.
  6. Stir in lima beans, pork and beans, tomato paste, water, chili powder, and salt.
  7. Pour the mixture into a 2-quart casserole dish.
  8. Bake at 350°F (175°C) for 30 minutes.
  9. Garnish with a border of tortilla chips before serving.
