Ingredients

  • 1 lb ground turkey
  • 1/2 cup uncooked Minute rice
  • 1 small onion, chopped
  • 1 egg
  • 1 tablespoon beef bouillon
  • 1/2 teaspoon garlic powder
  • 3 slices Swiss cheese (1 oz. each)
  • 10 ounces frozen chopped spinach or broccoli, thawed and well drained

Instructions

  1. Preheat the oven and prepare a 9 x 5-inch loaf pan by lightly greasing it.
  2. In a large bowl, mix ground turkey, uncooked Minute rice, chopped onion, egg, beef bouillon, and garlic powder until well combined.
  3. Spoon half of the turkey mixture into the prepared loaf pan, spreading evenly.
  4. Layer one slice of Swiss cheese over the turkey mixture.
  5. Spread thawed and well-drained chopped spinach or broccoli evenly over the cheese.
  6. Top with another slice of Swiss cheese.
  7. Cover with the remaining turkey mixture, pressing gently to seal and shape the loaf.
  8. Bake in the preheated oven at 350°F (175°C) for approximately 50 minutes, or until cooked through and browned.
  9. Let rest for a few minutes before slicing and serving.
