Ingredients

  • 3/4 cup pearl barley
  • 5 cups water
  • 3 slices bacon, cut into pieces
  • 2 small onions, diced
  • 1 green pepper, diced
  • 2 cups tomatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon paprika

Instructions

  1. Wash the pearl barley thoroughly.
  2. Add water and boil the barley for about 45 minutes or until tender; drain excess water.
  3. Brown the bacon pieces in a skillet until crispy.
  4. Add diced onions, green pepper, salt, pepper, and paprika to the bacon and cook until the onions are tender.
  5. Add chopped tomatoes and cook for an additional 10 minutes.
  6. Mix the cooked vegetables and bacon into the drained barley and simmer together for 5 minutes before serving.
