Ingredients

  • 1 pkg. romaine lettuce, torn
  • 1 green pepper, chopped
  • 1 medium onion, chopped
  • 1 (10 oz.) pkg. frozen peas
  • 1 1/2 c. mayonnaise
  • 2 c. shredded Cheddar cheese
  • 1 (4 1/2 oz.) can tiny shrimp, rinsed and drained
  • 4 bacon strips, cooked and crumbled
  • 1 medium tomato, cut into wedges
  • 3 hard-boiled eggs, cut into wedges
  • paprika

Instructions

  1. Layer the torn romaine lettuce in a 3-quart bowl.
  2. Add chopped green pepper evenly over the lettuce.
  3. Spread chopped onion on top of the green pepper.
  4. Distribute frozen peas over the onion layer.
  5. Spread mayonnaise over the peas.
  6. Sprinkle shredded Cheddar cheese on top of the mayonnaise layer.
  7. Cover and refrigerate the salad for at least 2 hours or overnight.
  8. Before serving, top with tiny shrimp, crumbled bacon, tomato wedges, and hard-boiled egg wedges.
  9. Garnish with paprika and fresh parsley.
