Ingredients

  • 2 cups flour
  • 1 1/2 cups sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cloves
  • 1 cup egg whites
  • 1/2 teaspoon cream of tartar
  • 1/2 cup cooking oil
  • 3/4 cup cold water
  • 2 teaspoons vanilla
  • all yolks from eggs used

Instructions

  1. Mix together flour, sugar, baking powder, salt, cinnamon, nutmeg, allspice, and cloves. Set aside.
  2. In another bowl, whip egg whites and cream of tartar until very stiff peaks form. Set aside.
  3. To the dry ingredients, add oil, water, vanilla, and egg yolks. Mix until smooth.
  4. Gently fold the beaten egg whites into the yolk mixture until well combined.
  5. Pour the batter into a 10-inch ungreased tube pan.
  6. Bake at 325°F (160°C) for 55 minutes.
  7. Towards the last 10 minutes, increase the oven temperature to 350°F (175°C) and continue baking until done.
  8. Invert the cake and let it cool completely before removing from the pan.
