Ingredients

  • 2 c. flour
  • 1 tsp. baking powder
  • 1 c. sugar
  • 1/8 tsp. salt
  • 1/8 tsp. nutmeg
  • 1/8 tsp. ground ginger
  • 1/2 c. orange juice
  • 2 Tbsp. butter, melted
  • 4 Tbsp. water
  • 1 egg, beaten
  • 4 oz. cranberries
  • 4 oz. chopped nuts
  • 1 Tbsp. powdered sugar

Instructions

  1. Sift together the flour, baking powder, sugar, salt, nutmeg, and ground ginger.
  2. Add the orange juice, water, melted butter, and beaten egg; mix until well blended.
  3. Stir in the cranberries and chopped nuts.
  4. Grease and line a 9 x 5-inch loaf pan with wax paper. Spoon in the mixture.
  5. Bake in a preheated oven at 325°F (160°C) for 1 hour.
  6. Remove from the pan, peel off the paper, and dust with powdered sugar.
  7. Slice and serve warm or cold with butter or cream cheese.
