Ingredients

  • 9 large eggs
  • 1 1/2 cups granulated sugar
  • 3 cups light corn syrup
  • 1 tablespoon vanilla extract
  • 3/4 teaspoon salt
  • 1 1/2 tablespoons ground cinnamon
  • 3/4 teaspoon ground nutmeg
  • 1/2 cup melted butter
  • 3 cups chopped pecans
  • 3 tablespoons all-purpose flour

Instructions

  1. Combine eggs, corn syrup, sugar, vanilla extract, and salt; mix well.
  2. Blend ground cinnamon and ground nutmeg with melted butter; add to the egg mixture and mix thoroughly.
  3. Combine chopped pecans with all-purpose flour; stir into the egg mixture.
  4. Pour the filling into pastry shells.
  5. Bake in a 400°F oven for 15 minutes.
  6. Reduce oven temperature to 350°F and continue baking for 40 minutes or until a knife inserted in the center comes out clean.
