Ingredients

  • 6 Tbsp. butter or oleo
  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/2 cup buttermilk
  • 3/4 cup mashed cooked pumpkin or canned pumpkin
  • 1/2 cup chopped walnuts

Instructions

  1. Cream butter and brown sugar until light and fluffy; beat in eggs.
  2. Combine flour, salt, baking soda, cinnamon, ginger, and nutmeg.
  3. Mix pumpkin and buttermilk; add to creamed mixture alternately with dry ingredients, mixing well after each addition.
  4. Fold in chopped walnuts.
  5. Spoon mixture into a greased and floured 6 1/2 cup ring mold; cover tightly with foil.
  6. Bake at 350°F for one hour.
  7. Let stand 10 minutes.
  8. Unmold and serve, optionally with whipped cream.
